Ingredients

4 large eggs

2 cups whole milk

1 cup granulated sugar

1 teaspoon pure vanilla extract

½ teaspoon ground nutmeg

½ teaspoon ground cinnamon

¼ teaspoon salt

Optional: ½ cup raisins or nutmeg for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 1.5-quart baking dish or individual custard cups with butter.

Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them until they are well beaten.

Combine Ingredients: Gradually add in the whole milk, granulated sugar, vanilla extract, nutmeg, cinnamon, and salt. Whisk until the mixture is smooth and the sugar has dissolved completely.

Strain Mixture (Optional): For a smoother custard, you can strain the mixture through a fine sieve into another bowl to remove any chalaza or egg bits.

Add Raisins (Optional): If you are using raisins, sprinkle them at the bottom of the greased baking dish or distribute evenly among individual cups.

Pour Mixture: Pour the custard mixture over the raisins (if using) in the prepared dish or cups, filling them about three-quarters full to allow for expansion during baking.

Create a Water Bath: Place the baking dish in a larger pan and fill the outer pan with hot water until it reaches halfway up the sides of the custard dish. This prevents the custard from cracking.

Bake: Bake in the preheated oven for about 45-50 minutes, or until a knife inserted in the center comes out clean. The custard should be set but still slightly wobbly in the center.

Cool: Remove the custard from the water bath and allow it to cool on a wire rack. Once cooled, refrigerate for at least 2 hours before serving.

Serve: Serve chilled or at room temperature, optionally garnished with a sprinkle of nutmeg or a dollop of whipped cream.
